'Just for the Halibut' Bacon-Wrapped Sliders with Sriracha Garlic Dill Sauce
This week for our Keep It Simple Seafood (KISS) recipe, we’re teaching how to make bacon-wrapped halibut sliders that are perfect for game day or any casual get-together!

Makes 6 sliders
Ingredients:
Sliders
1 lbs halibut, cut into 2x2” squares
6 slices thin sliced bacon
Toothpicks
2 Tbsp oil (peanut oil, avocado oil, ghee or other high smoke point oil)
Brioche slider buns
Salt and pepper, to taste
Havarti cheese, optional
Mini greens
Creamy Sriracha Garlic Dill Sauce
½ cup mayo
4 Tbsp cocktail sauce
2 Tbsp key lime juice
3 Tbsp fresh dill
2 Tbsp Sriracha sauce
3 cloves of garlic
Cut the halibut into 2x2” squares. Pat dry with paper towels and add some salt and pepper.
Cut each slice of bacon in half. Wrap half of the piece of bacon around the halibut. Then take the other half and wrap it in the opposite direction which will completely encase the halibut. Use a toothpick to bind the bacon together around the halibut. Repeat process for each slider and place on parchment paper.
In a large cooking pan heat to medium-high and add the oil. You can also add a little bit of water to allow the bacon to crisp up better. Cook until bacon is golden brown on each side or about 4 minutes per side. Each stovetop will cook differently so be mindful of how fast your stovetop cooks. Remove the fish from the cooking pan and place it on a paper towel to absorb excess grease.
Create the sauce by combining all the sauce ingredients in a small mixing cup. Use an emulsifier until creamy and well blended.
Prepare your Brioche buns and prep mini greens. Dollop the sauce on either side of the Brioche bun, add the greens, add small piece of Havarti cheese (optional) and add the bacon-wrapped halibut. It’s that simple.
This is a great platter dish for sports events or family get togethers.
