Shrimp Breakfast Burritos

Ingredients

  • ½ pound Icy Fresh side stripe shrimp (peeled, deveined)

  • 4 large eggs (scrambled)

  • 1 avocado (sliced)

  • ½ cup diced bell peppers (red, yellow, or green)

  • ¼ cup diced red onion

  • 1 tablespoon olive oil

  • 2 large tortillas (whole wheat or your choice)

  • Salt and pepper (to taste)

  • Optional toppings: shredded cheese, hot sauce, salsa, or cilantro

Instructions

  1. Prepare the Shrimp
    In a skillet over medium heat, add olive oil. Sauté the shrimp with a pinch of salt and pepper until they turn pink and opaque (about 2-3 minutes per side). Set aside.

  2. Cook the Vegetables
    In the same skillet, sauté the diced bell peppers and red onion until softened, about 3-4 minutes. Remove from heat.
